Josie’s Bruschetta with Sliced Baguette

  1. Make the brushetta:

    1. Make a shallow cross-shaped cut at the ends of the tomatoes. Put the tomatoes in boiling water for 1 minute, then remove and peel them.

    2. Cut the tomatoes into quarters and squeeze out most of the juice and seeds.

    3. Finely chop the tomatoes.

    4. Toss the chopped tomatoes in a bowl with the onion, garlic, olive oil, vinegar, basil, salt, and pepper. You may want to add more salt.

  2. Assemble:

    Cut the baguettes on the diagonal into half-inch thick slices, brush one side with olive oil, and put them back into the oven at 450 degrees for 5 to 6 minutes until browned at the edges.

  3. Enjoy!

    Spoon the bruschetta onto the baguette pieces and enjoy!
