Josie’s Baguette (for brushetta)

    • Mix the flour, warm water, sugar, salt, and yeast in a mixing bowl until they form a dough.
    • Coat a bowl with oil. Put in the dough, cover, and let it rise for 1 hour.
    • Punch the risen dough down. Roll into a 16" X 12" rectangle. Then cut in half lengthwise to make two 8" X 12" rectangles.
    • Roll each rectangle of dough tightly lengthwise.
    • Put on a greased cookie sheet, cutting slashes across the top. Let them rise again for 45 minutes.
    • Preheat the oven to 375 degrees.
    • Mix the egg yolk with water and brush over the top of the loaves
    • Bake the loaves for about 20 minutes or until golden brown.
