Marie’s Sausage & Peppers Braided Bread

  1. Brown sausage and cook with pepper until done, stirring to break up meat; drain.  Cool.

  2. To make dough:
    1. Measure warm water into large warm bowl.
    2. Stir in yeast until dissolved. 
    3. Add sugar, salt, seasoning, butter, 1 egg and 2 C flour; beat until smooth. 
    4. Stir in enough more flour to make soft dough.  Knead 8 to 10 minutes. 
    5. Place in greased bowl; turn to grease top. 
    6. Cover; let rise until doubled, about 1 hour.
  3. After dough has risen:
    1. Punch dough down; . 
    2. Either divide into 6 pieces and roll each into 14 x 4 in strip OR roll into two (2) 14” x 12” rectangles, then cut each into 4” wide strips.
    3. Stir cheese into cooled sausage mixture; spoon down center of each strip.
    4. Pinch long edges together to form 14 inch ropes; seal. 
    5. Braid 3 ropes together; seal. Repeat.  Place on baking sheet dusted w/corn meal; cover. 
    6. Let rise until doubled, about 45 minutes.  
  4. After second rise:
    1. Beat remaining egg; brush on loaves. 
    2. Bake at preheated 400 degree oven about 25 minutes.  (May need to loosely cover w/ foil during last 10-15 minutes to avoid overbrowning.)
    3. Serve warm. 
    4. Refrigerate leftovers; reheat to serve.
