Marie’s Cinnamon Rolls

These cinnamon rolls are the perfect addition to a brunch; they're just the right size and there are plenty to go around.






Making the dough

  1. Bread machine method:
    • Place all ingredients in bread machine pan, select Dough setting, and press Start. 
      • When dough has risen long enough, the machine will beep. 
    • Turn off bread machine, remove bread pan, and turn out dough onto floured or oiled countertop or cutting board.
  2. OR mixer method:
    • Warm water to 105-115 degrees and add yeast and ½ tsp sugar. 
    • Let proof. 
    • Then add to mixer along with egg, salt, sugar, powdered milk and enough flour to make soft dough. 
    • Knead until soft and elastic. 
    • Place in greased, large bowl.  Cover.  Let rise in warm place till double in bulk. 
    • Turn out dough onto floured or oiled countertop or cutting board.

Assembling the rolls

  1. Rolling, filling, rising
    • Brush 9x13 pan with a little of the melted butter for the filling. 
    • Roll out dough to a 20 x 10” rectangle. 
    • With a sharp knife, cut dough in half lengthwise, ending with two (2) 20”x5” rectangles.
    • For the filling, brush each rectangle of dough with the rest of the melted butter. 
    • In a small bowl, combine the sugar and cinnamon; sprinkle mixture over dough. 
    • Starting with the long edge, roll up dough tightly; pinch seam to seal. 
    • With a knife, lightly mark each roll into 24 pieces. 
    • Slide a 12-inch piece of dental floss or heavy thread underneath. 
      • By bringing the ends of the floss up and crisscrossing them at the top of each mark, you can cut through the roll by pulling the strings in opposite directions. 
    • Place the rolls cut side up in prepared pans. 
    • Cover and let rise in a warm oven 30-45 minutes until doubled. 
      • (Hint:  to warm oven slightly, turn oven on Warm setting for 1 minute, then turn it off, and place covered dough in oven to rise.)
    • Preheat oven to 350. 
    • Bake for 20-25 minutes until brown. 
    • Remove from oven, turn out onto plate and invert onto cooling rack. 
    • Allow rolls to cool slightly.
  2. Icing:

    Meanwhile, in a small bowl, combine the confectioners sugar, milk and vanilla for the icing, using enough milk to make the icing thin enough to drizzle on the rolls.

    Once the rolls have cooled slightly, drizzle with icing and serve.
