Marie’s Crispy & Chewy Drop Sugar Cookies

    • Adjust oven rack to middle position and heat oven to 350.
    • Line 2 baking sheets with parchment paper or use silpat.
    • Whisk flour, baking powder, baking soda and salt together in a bowl.
    • Place 1 1/2 cups sugar and cream cheese in large bowl.
    • Whisk in warm melted butter (some lumps of cream cheese will remain).
    • Whisk in oil until incorporated.
    • Whisk in egg, milk, and vanilla until smooth.
    • Using rubber spatula, fold in flour mixture until soft dough forms.
    • Spread remaining 1/3 cup sugar in shallow dish.
    • Working with 1 or 2 Tablespoons dough (your choice, what size cookie do you want?), roll into balls and then roll in sugar to coat.
    • Space balls 2" apart on prepared sheets.
    • Slightly smoosh dough balls with bottom of glass.
    • Using sugar left in dish, sprinkle a little over each cookie.
    • Bake cookies, one sheet at a time, until edges are set and beginning to brown, approx. 11-13 minutes (rotate sheets halfway through for even browning).
    • Let cookies cool on sheet 5 minutes.
